Baby kale leaves come from young kale plants, and are more delicate in flavor and texture than mature kale. Baby kale is best eaten raw in salads and as an edible garnish, but is tough enough to be sauteed like spinach.
Young leaves have a mild flavor and all the nutritional benefits of kale with a milder taste and softer leaves.
Stems are soft and don’t need to be trimmed and is one of the easiest kales to use.
Because baby kale is so tender, it's great for eating raw. You can use it for smoothies and salads or as a garnish. If you choose to cook it, it doesn't need nearly as much time as other kales.
